Rosemary is commonly known as a nice addition to roasted meat,
but belive it or not – it can also taste delicious in a cake!
Try out Tim’s recipe:
Goat cheese cake with Rosemary.
400g soft goat cheese
1 egg, 3 yolks
50g sugar
1 tsp vanilla extract
zest & juice of 1 lemon
400ml double cream, whipped
2 tsp olive oil
8 sprigs of rosemary
Raisins soaked in 50ml Pastis (anis apéritif)
Crumble the cheese into a bowl and add the eggs, sugar, vanilla and lemon. Mix well.
Add the cream and the soaked raisins. Soak the rosemary in olive oil.
Place into rings or a cake tin and stick rosemary into the mixture.
Bake in an oven at 160 degrees for 20 mins.
The tin can be placed in a bain-marie.
